The concept
Unique in the Laurentians
Just 15 minutes from the ski slopes,in an ancestral house, we offer you a unique concept of “pierrade” which consists of a hot stone heated to 650F offering a natural surface ideal for cooking without added fat.
We welcome you to choose from a wide variety of meats and fish such as filet mignon, wild boar, tuna, bison, seafood, kangaroo, deer, elk, crocodile, etc.
The menu also offers varied and quality starters and mains.
The cellar boasts a wide selection of wines, private imports as well as a wide selection of wine by the glass.
Here and there
Choose classics like poultry, flank steak or Angus beef filet mignon, duck breast or rack of lamb. A 100% Canadian pierrade is available with Quebec venison, bison and elk.
Or, for something more exotic, we offer camel, seal, kangaroo, crocodile…
Finally, fish lovers will also be delighted with our famous Yellowfin tuna steak or shrimp and scallops.

The heart of our cuisine
My approach is based on simplicity in order to highlight regional products while honoring the producers.
I interfere as little as possible between the product and my customers. The concept of “pierrade” fits perfectly into this philosophy. By touching the ingredients, you can appreciate the quality and the freshness of our products.

I come from Chêvremont, a small ancient village in the hills above Liège, Belgium. It’s at La Gattière, a restaurant in my hometown, that I took my first steps in the kitchen when I was 14. At 18, I entered the Sanglier des Ardennes, a renowned inn in the heart of the Belgian Ardennes run by the Caerdinael family, to apprentice under Frédéric Caerdinael.
I landed in Quebec on a very cold day in April 1995 with a head full of dreams and completely empty pockets. I cooked in several restaurants, from L’Actuel in downtown Montreal to La Porte Rouge in Mont-Tremblant and Petit Poucet in Val-David.
A constant journey during which I gained the confidence to develop my culinary perspective.
In 2010, I acquired a small restaurant in Mont-Tremblant to introduce guests to an idea that has been on my mind for years, this concept of “pierrades”, unique in Quebec.
In 2018, the success of the concept led us to expand the restaurant.
